VEGETABLE LENTIL SOUP

Hearty lentil soup, chock full of veggies and is very yummy. It is healthy, filling, super economical, versatile and it’s seriously good.
Method
- In a medium soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender.
- Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
- Stir in lentils, and add water and tomatoes.
- Bring to a boil. Reduce the heat and cook for sometime till lentil is cooked, or you can even pressure cook it.
- Using a stick blender, use 2-3 quick whizzes to thicken the soup.
- When ready to serve stir in spinach, and cook until it wilts. Stir in lemon juice and season to taste with salt and pepper.
- Serve hot.

- Red lentil – 30 gms
- Onion – 20 gms,chopped
- Carrot – 20 gms, chopped
- Celery – ½ stalk, chopped
- Tomatoes – 30 gms, chopped
- Spinach – 3-4 leaves, rinsed and sliced thinly
- Oil – 1 tsp
- Garlic – 1 clove, minced
- Dried Oregano – ¼ tsp
- Bay leaf – ½
- Water – 3 -4 cups
- Lemon juice – ½ tsp
- Pepper powder – ¼ tsp
- Salt to taste
