Tomato Brown Rice is a vegan Mediterranean recipe which is a perfect side dish next to chicken or seafood dishes its simple, satisfying and easy to make. Brown rice has a better nutritional value including selenium and manganese, and it doesn’t lose nutrients before it hits your plate. And the tomato in the dish makes the recipe more tastier and gives a sweet sour taste.


  1. In a deep vessel heat oil put mustard seeds and curry leaves and saute for few seconds.
  2. Then add chopped onion and ginger garlic paste saute for few minutes until translucent.
  3. Add chopped tomatoes and cook until gets soft.
  4. Mix the soaked brown rice, salt and water and mix it well cover with lid and cook for about 25 minutes until water is absorbed.
  5. Add the lemon juice and mix it well garnish it with some fresh coriander leaves and serve it hot with salad or raita.


  • Brown rice – 50 gms (soaked for 1 hour)
  • Tomato – 50 gms (diced)
  • Onion – 25 gms (diced)
  • Oil – 1 tsp
  • Ginger garlic paste – ¼ tsp
  • Mustard seeds – ¼ tsp
  • Curry leaves – 3-4
  • Coriander leaves – 1 tsp
  • Lemon juice – 1 tsp
  • Red chilli powder – ¼ tsp
  • Salt – as per taste.
