Eggplants have lot of health benefits in it. Eggplants are low in calories thus also promotes weight loss. It prevents from various diseases and also promotes healthy heart. It also helps in digestion and treats anemia too. Manages diabetes and are good for bones too.


Method

  • Remove stem and wash eggplant.
  • Slice eggplant in thin (2cm) round circles.
  • Take a big bowl and put sliced eggplant into it.
  • Now add turmeric powder, red chili powder, roasted cumin powder and salt. Mix well.
  • Heat up the frying pan and grease it with olive oil
  • Place these spiced eggplant slices over the pan and let it cook for 2 minutes.
  • Keep checking in between
  • Flip to the other side and let it cook for same time.
  • When completely done on both sides sprinkle some oregano and serve.

Eggplant - 1 medium(Approx - 100g)

Cumin powder – 1 tsp

Red chili powder – 1 tsp

Turmeric powder - ½ tsp

Oregano – 1 tsp

Olive oil – 1 tsp

Salt and pepper – to taste
