Spanish Egg Omelette

This traditional Spanish dish is quite a hit when it comes to omelette lovers and the one who opts for keto diet. I have modified it a bit by omitting the potatoes in it and it turned out yummy.


Method

  • Whisk the eggs in a bowl. Add salt, pepper and parsley and whisk again till fluffy consistency.
  • Heat butter in a pan and saute tomatoes in it.
  • Mix this tomato mixture and grated cheese in the bowl of egg batter and again pour it in the same pan.
  • Cook the egg mixture on 1 side and flip to cook on another side.
  • Cut the omelette in 4 pcs and serve it in a serving plate.

Ingredients

  • Eggs – 3 in no
  • Cheese – 30 gms
  • Tomatoes – 25gms
  • Butter – 2 tsp
  • Parsley – 1 tsp
  • Pepper powder – ½ tsp
  • Salt – As per taste
