This is an amazing low calorie and a nutritious recipe which consists of majority of nutrients packed in it, with Quinoa the most healthiest food as its main ingredient. Unlike actual grains such as wheat and barley, which grow in grasses, quinoa plants grow edible seeds. Because of this process, Quinoa ios actually known as a “pseudocereal,” a seed used in nutrition the same way a cereal grain such as Barley would be. its a rare plant food whic provides you with complete protein with all the 20 Amino acids. and is considered to be gluten free. 


  1. Pour the water into a saucepan, and cover with a lid. Bring to a boil over high heat, then pour in the quinoa, recover, and continue to simmer over low heat until the water has been absorbed, 15 to 20 minutes. Scrape into a mixing bowl, and chill in the refrigerator until cold.
  2. Once cold, stir in the red bell pepper, yellow bell pepper, red onion, curry powder, cilantro, lime juice, sliced almonds, carrots, and cranberries and pomegranate (optional) Season to taste with salt and pepper. Chill before serving.


 Water- 1 ½ cup

 quinoa rinsed- 1 cup

red bell pepper- ¼ cup

yellow bell pepper- ¼ cup

red onion- 1 medium size

fresh coriander or cilantro- ¼ cup

lime- 1

sliced almonds- ¼ cup

minced carrot- ¼ cup

dried cranberries- ½ cup

salt- as per taste

pepper- as per taste
