Keto butter chicken is ridiculously tasty, aromatic and a breeze to whip up! & its naturally a low carb dish, it’s in essence a yogurt with spices and lime marinated chicken, cooked up in a mildly spiced and incredible curry sauce!!!


Method

  1. In a large bowl with 2 tablespoons garam masala, grated ginger, minced garlic, add in the curd, stir to combine.
  2. Transfer to the refrigerator and chill at least 30 minutes.
  3. For the sauce or gravy place the onion, ginger, garlic, crushed tomatoes and spices in a blender, and blend until smooth and set aside.
  4. Heat 1 tablespoon of oil in a large pan over medium high heat. Place the chicken along with the marinade in the skillet, browning and saute 3 to 4 minutes per side once browned, pour in the sauce cook and 5 to 6 minutes longer.
  5. Stir in the heavy cream and butter, continue to cook another minute.
  6. Add salt top with coriander leaves and serve with cauliflower rice if desired.

Ingredients

  • Chicken – 100 gms (boneless about 2 inch piece each)
  • Onion – 25 gms ( chopped )
  • Garam masala – 1 tsp
  • Ginger grated – ½ tsp
  • Garlic – ½ tsp minced
  • Whole milk curd – 1 cup

For sauce/gravy:

  • Coconut oil – 1 tbsp
  • Butter – 2 tbsp
  • Ginger grated – 1 tsp
  • Garlic – 1 tsp
  • Onion – 25 gms ( chopped )
  • Tomatoes – 50 gms (chopped)
  • Coriander – 2 tsp
  • Garam masala – ½ tsp
  • Cumin – ¼ tsp
  • Chili powder – ¼ tsp
  • Heavy cream – 2 tbsp
  • Coriander leaves – for garnishing
  • Salt – as per taste.
