This creamy chilled keto soup uses all the flavor components we crave in Mexican food chiles and chili powder, aroma of the cumin and cilantro, and the zing of lime juice. And best of all, the craveable taste of avocado.

The creaminess from the avocados, which makes this soup better for your heart and for your waistline. Avocado is mostly monosaturated, making it a better option for your cardio vascular health. Avocado is filled with other nutrients, and it's virtually sodium, sugar, and cholesterol free.

Cream adds the final touch in the flavor of this soup. If you're sensitive or intolerant to dairy, you can make this soup dairy-free by leaving it out altogether.


Method

  1. In a pan or skillet, heat 1 and ½  tbsp of the oil over medium heat. Add onion, green chilies, garlic, cook stirring occasionally, until the onion is slightly soft, about 2 mins.
  2. Scoop out the fresh avocado flesh into a large bowl and mash.
  3. Add the sauted onion mixture, vegetable broth, 1 tsp lime juice, coriander leaves, water, black pepper, cumin and salt.
  4. Transfer the mixture to the grinder, blend until smooth and pour the mixture through the strainer in a bowl. Cover and chill at least 15-20 minutes.
  5. In a large pan heat the remaining oil over medium heat. Add the pumpkin seeds and cook until they begin to pop and slightly toasted for about 2-3 minutes.
  6. Add the remaining lime juice and the chili powder. Cook and stir until the lime juice has completely evaporated, let it cool
  7. To serve this soup take a bowl pour the chilled avocado mixture, drizzle with cream and top with pumpkin seeds.

Ingredients

  • Avocado – 100 gms
  • Onion – 25 gms (chopped)
  • Sour Cream – 2 tbsp
  • Vegetable broth – 100 ml
  • Oil – 2 tbsp
  • Garlic – 1 clove (chopped)
  • Green chilies – 1
  • Water – 200 ml
  • Coriander leaves – 1 tbsp
  • Cumin powder – ¼ tsp
  • Lime juice – 2 tsp
  • Pumpkin seeds – 1 tbsp
  • Chili powder – ¼ tsp
  • Black pepper powder – ¼ tsp
  • Kosher salt – as per taste.
