Tehri is an one pot dish originated from the Awadhi cuisine. It is mildly spicy, delicious and flavorful. It is most commonly eaten for a meal in North India. But here I have replace rice with foxtail millet. Replacing rice with millets makes this a wholesome meal which is full of fibre and omega 6 without the extra carb burden. It is very easy, healthy and tasty recipe.


  • Heat oil in a non stick pot. Then add all whole spices and asafoetida, once it starts spluttering, add ginger garlic paste and cook for 2 minutes.
  • Now add onions and fry for 5 minutes then add all veggies and cook for 5 more minutes.
  • Add garam masala powder, turmeric powder, coriander powder, red chilli powder, mint leaves and curd. Fry for 5 miutes then add millet, water and salt.
  • Pressure cook till cook.
  • Garnish with fresh coriander leaves and serve hot.


  • Foxtail millet- 30 gms
  • Onion- 50 gms (sliced)
  • Carrot- 25 gms (chopped)
  • French beans- 25 gms (chopped)
  • Tomato- 50 gms (chopped)
  • Fresh coriander- 3 tbsp (finely chopped)
  • Mint leaves- 2 tbsp (finely chopped)
  • Ginger garlic paste- 2 tsp
  • Green chilli- 1 (finely chopped)
  • Curd- 3 tbsp
  • Cumin seeds- ¾ tsp
  • Bay leaf- 2
  • Cloves- 2
  • Asafoetida- 2 pinch
  • Garam masala powder-1 tsp
  • Coriander powder- ½ tsp
  • Turmeric powder- ½ tsp
  • Red chilli powder- ½ tsp
  • Oil- 1 tsp
  • Water- as required
  • Salt- as per taste
