This idli recipe is different than the regular ones. The foxtail millet is used in large proportions as compared to rice. Foxtail millet is yellowish colored millet. It is very rich in fiber, protein and minerals. It also helps to regulate blood sugar levels. Millets can be substituted for rice in many recipes making it more suitable for diabetics and promoting heart health. The magnesium found in large quantities in millets. It has been shown to reduce high blood pressure and helps to prevent heart attacks.


  • Soak foxtail millet for 4-5 hours. Soak rice separately and soak urad dal and methi seeds together for 4-5 hours.
  • Drain the water from rice, dal and millet mixture.
  • Grind it by adding water to form a batter. Mix both the batters well by adding salt.
  • Cover and place in a warm area to ferment overnight.
  • Grease idli molds with oil & pour batter into it.
  • Place the idli stand inside steamer once it begins to steam.
  • Cover and steam for 12-14 minutes. Remove idlis carefully.
  • Serve hot with sambar.


  • Foxtail millet- 30 gms
  • Brown rice- 15 gms
  • Urad dal- 15 gms
  • Fenugreek seeds- ¾ tsp
  • Water- as required
  • Oil- 1 tsp
  • Salt- as per taste
