Egg white bhurji

Egg is a rich and inexpensive source of high quality protein and more than half the protein is found in the egg white. Also egg white has lower fat and cholesterol than the yolk. Egg does not have carbs and hence it helps weight loss. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as  iron, zinc and copper


1. In a bowl break the eggs and separate the egg white and yolk. Whisk the egg white

2. To the egg white, add salt and turmeric powder and whisk well

3. Heat oil in a vessel and put grated ginger, finely chopped capsicum ,chopped onions and green chillies and saute until the onions and capsicum are soft and tender.

4. Then add chopped tomatoes and saute until the tomatoes are softened then add egg mixture

5. Continue to stir until the egg is well cooked

6. Put the egg bhurji in a serving plate and garnish with freshly chopped coriander leaves.

Green capsicum finely chopped- 1/2

Green chili- 1

Grated ginger- 1 tsp

Turmeric powder- ¼ tsp

Onion finely chopped- 1

Tomato finely chopped- 1

Oil- 1/2 tsp

Coriander leaves for garnish

Salt- to taste
