Chicken Biryani in Brown Rice

Chicken Biryani is a delicacy which we all long to eat. But when on diet consuming the traditionally cooked biryani is not advised. However when Biryani is cooked as mentioned in this recipe, it can be also consumed when on diet. This dish is not only delicious but nutritious as well. Chicken is rich source of protein and selenium which is an antioxidant and fights aging. Brown rice is used in this recipe is rich in fiber and aids digestion and it is gluten free and more nutritious than the white rice


Method

  1. Soak the brown rice for atleast 2 hrs.
  2. Now heat the oil in a large pan and add half of the sliced onions, pepper, cumin seeds ,garlic and ginger paste,  salt and cook on a high heat until the onions are slightly brown.
  3. Now put the chicken and cook on a high flame and stirring continuously for 5-10 min Add the green chillies and red chilli powder,  coriander powder,  turmeric, cumin powder and paprika and cook on a high flame 4-5 minutes.
  4.  Add the tomato puree and cook on a high heat for a further 2-3 minutes.
  5. Add 1/2 cup of  water and simmer for 10 minutes until the curry has thickened.
  6. Meantime cook the rice. Rice should be half cooked .
  7. Fry the remaining sliced onions in a nonstick pan with a drop of oil until brown and crispy.
  8. Now spread out half of the rice in a large vessel. Spread out the chicken curry on top of the rice. Spread half of the fried onions and half of the coriander. Now add the remaining rice, and then on top of it fried onions and coriander.
  9. Serve hot

Ingredients

Chicken boneless- 60 gms

Brown rice- 30 gms

Onions finely sliced- 35g

Garlic- 1 tsp

Ginger paste - 1 tsp

Coarse black pepper- a pinch

Paprika- ¼ tsp.

Turmeric powder- ¼ tsp.

Green chilli  -2

red chilli powder -1/2 tsp

Cumin seeds- ¼ tsp

Olive oil- 1 tsp

Tomato finely chopped- 10g

Tomato puree- 1 cup

Coriander chopped- 2 tsp

Cinnamon stick- 1 inch

Star anise- 1

Black cardamoms- 1.

Bayleaf- 1

Cumin seeds- ¼ tsp.

Water - 2cups

Salt to taste
