Brown rice and sprouts Khichdi

Brown rice and sprouts khichdi is light on the stomach yet filling and nourishing. It is a quick, healthy, one pot meal that is perfect for busy week days. Unlike the usual rice-lentil combination, this khichdi is made using wheat Dalia and lentils. This fiber-rich khichdi is also packed with fresh seasonal vegetables and is as comforting as it is nutritious. 


Method

  • In a pressure cooker, pour some oil, add the cumin seeds, finely chopped ginger, sliced onions and salt. Stir it nicely and add the curry leaves, green chillies, turmeric powder, salt, pepper powder and brown rice.
  • Now add sprouts and mix it thoroughly. Add enough water, cover with the lid on it for 5 whistles.
  • After 5 whistles, switch off the flame and mash it properly.
  • Take it in a bowl, garnish it with coriander and mint leaves and some lemon juice on it and serve hot with curd or raita

Ingredients

  • Mixed Sprouts – 20 gms
  • Brown rice – 30 gms
  • Sliced onion – 1 in number
  • Tomatoes – 1 small
  • Carrots – ½
  • French beans – 4-5 in no
  • Chopped or slit green chillies – 1-2
  • Curry leaves – 1 spring
  • Cumin seeds – ½ tsp
  • Chopped ginger – ¼ tsp
  • Turmeric powder – a pinch
  • Pepper powder – ¼ tsp
  • Salt – As per taste
  • Oil – 1 tsp
