BABA GANOUSH
Baba ganoush is a Mediterranean dip made of blend of eggplant with lemon juice and tahini and sea salt. It is very low in calorie and is a good source of fibre, vitamins and minerals It also provides adequate nutrition for the body. Eggplant is a very good source of dietary fiber, vitamin B1 and copper. and also a goodsource of manganese,potassium, vitamin B6, folate, niacin and vitamin K.
Method
Grill/Roast eggplants in the oven (at 400F) until they are soft, turning all sides occasionally.
Now remove the skins of roasted eggplants and mash them in a grinder.
In a vessel, put extra virgin olive oil and then put mashed eggplant and saute them on medium flame for 3-4 min.
Remove the mixture from the flame and let it cool
Now add yogurt, tahini, lemon juice, garlic and salt and mix well
Garnish it with fresh mint or parsley or corriander.

Half Eggplants, roasted - 50 gms
Yogurt - 1 tbsp.
Tahini - ½ tsp.
Garlic cloves, grated - 2-3
Lemon juice - ¼ tsp.
Salt to taste
Extra virgin olive oil - 1 tsp.
Fresh coriander/mint/parsley for garnish
